The aroma reveals a spiciness of great complexity: stewed apples and caraway, leather, aniseed, spontaneous fermentation, a touch of very ripe fruit. On the palate, the silky texture and brisk acidity form a stark contrast, while texture and tactile minerality add length. Quite a chunk.
