Tasting Notes
Day 1: Mineral on the nose, wet, hot stone, rock flour, flint, mint, tangerine zest, cedar wood, mirabelle plum, very complex. Firm, ripe acidity on the palate, gripping, dense, pure terroir, lime and mint are present, vibrant and profound, very dense, long, needs time, but already great now. Day 2: Citrus elements and mint have intensified, with pure mineral behind them. More open on the palate, supple, phenolic, dense, open, full of tension and pressure. A touch less tension. Day 3: Hot stone, rock flour, mint, plus red peach, ripe mirabelle plum and red apple. Very powerful and equally differentiated on the palate, has a brilliant phenolic character, has opened up further, amalgam of minerality and fruit, long.
