Cloudy, amber-colored. Subtle aromas of fennel seeds and rocket, with nutty, resinous and slightly fermented notes such as bread dough. Dry, with grippy tannins and a salty texture. The tannin is rather coarsely cut and drying, accompanied by fresh acidity and light CO₂. Overall very clean, grippy and rustic in style in the best sense.
