Tasting from 20.02.2026: Ulrich Sautter

Day 1: With a distinct chalky minerality on the nose, rock flour, yellow apple, mango, ethereal and iodine notes, menthol, orange zest. On the palate, melting and pressure elegantly combined, dense and full-bodied with a taut and linear flow, fine acidity and phenolics, ripe and clear fruit, ever expanding mineral salinity carries into the long finish. Day 2: shows more fruit and ethereality on the nose, ripe apple, salted lemons, herbal spice. Still mineral on the palate, noticeable phenolic aftertaste, acidity somewhat restrained Day 3: Significantly more ripe fruit to the salty, chalky mineral note, mango, ripe pineapple, salt lemons, minerality continues to carry the wine to the fruit, but loses tension and tension, mild acidity, phenolic noticeable but more tension-bearing than disturbing.
