Freshly cooked apple puree, spontaneous fermentation, salt crust. In addition to the yeasty aromas, there is also a typical varietal spiciness reminiscent of thyme honey. Taut and crisp in the mouth, good phenolics, medium body, not exaggerated in the extraction, well-balanced alternative Pinot Gris.
