The aroma is characterised by spontaneous fermentation, then also yeasty like Champagne, finally spicy notes, typical of the terroir, peppery. The wine is also very terroir-influenced on the palate, with chalky and peppery nuances; the mousse leads into a fine phenolic flavour and a firm, but never aggressive acidity. Very stylish!
