Falstaff Wineguide Switzerland 2023/24

Bernard Cavé and Denise Crettol now own 3.5 hectares of vines on the slopes of Verschiez and Antagnes. In addition, grapes are purchased from the Coteau de Verschiez (3.5 hectares) and from Ollon (1 hectare). Chasselas accounts for 60 percent of production. Since 2006, some wines have also been vinified in concrete amphorae, "which emphasise the expression of the terroir." "On the slope of Verschiez, there is a vein of gypsum that gives the wine a light-footed, silky, chalky side." The neuralgic center of the winery with reception, wine sales and traiteur service is located just outside Ollon. An ideal place to visit with family or friends.
