Nobelhart & Schmutzig, awarded one MICHELIN Star, is widely regarded as one of Berlin’s most distinctive restaurants. Its defining concept, “brutal lokal,” stands for an uncompromisingly regional and seasonal cuisine, built on close relationships with local producers.
At its core is Billy Wagner, a restaurateur known for challenging conventions. His approach is as clear as it is rigorous: cook with what the immediate surroundings provide, collaborate directly with those who grow it, and resist compromise.
