SIJA Opens in Kaunas With a Contemporary Take on Lithuanian Cuisine
As Lithuania’s culinary identity continues to evolve, a new generation of restaurants is returning to local ingredients and traditions with a more thoughtful, contemporary perspective. In Kaunas, the newly opened SIJA joins this movement.
Kaunas has welcomed a new addition to its changing dining scene with the opening of SIJA, a restaurant focused on modern Lithuanian cuisine through a seasonal and zero-waste philosophy.
Locally sourced ingredients
Led by chef Rokas Vasiliauskas, the restaurant builds its concept around locally sourced ingredients, close relationships with farmers, and a contemporary interpretation of regional traditions.
Before opening Sija, Rokas Vasiliauskas built his career in kitchens across the UK, Spain, and Lithuania after studying Professional Culinary Arts at the University of Derby.
Returning to Lithuania, he became known through his work at Monte Pacis, where he was recognised among the Baltic region’s leading young chefs.
Traditional flavours
Sustainability sits at the centre of the chef’s approach, with the kitchen working exclusively with Lithuanian produce while aiming to minimise waste throughout the cooking process. In the menu, traditional flavours appear in reworked forms, from Lithuanian mixed salad “mišrainė” with smoked chicken and pickled vegetables to potato dumplings “švilpikai” paired with steamed milk and pickled chanterelles. Elsewhere, dishes such as beef tartare with blueberries and burnt garlic, or zander served with spinach emulsion and smoked chicken sauce, introduce a more modern gastronomic direction.
Redefining Lithuanian cuisine
A seasonally changing tasting menu concludes the experience with desserts built around local ingredients including kefir, sea buckthorn, viburnum berries, apple, curd cheese, and rhubarb.
With its focus on locality, seasonality, and restrained elegance, SIJA joins a wider movement of restaurants redefining Lithuanian cuisine through a more thoughtful and ingredient-driven lens.
