Oliver Carr is Denmark’s Best Sommelier 2025

The Danish Sommelier Association (DSF) is delighted to announce that Oliver Carr has been named Denmark’s Best Sommelier 2025, following a rigorous competition held on Monday, 8 September at Copenhagen's Moltkes Palæ.

After a rigorous one-day competition of  blind tasting, wine service, and food pairing, Denmark now officially has a Best Sommelier: Currently at Restaurant Anton, Oliver Carr impressed the judges with his exceptional knowledge, technical precision, and composed presence during the live final. The victory podium was completed by runner-up Toke Fiedler Terkildsen (Restaurant Domæne), and Thomas Vanhove (Geranium), who came third. "The stage is always challenging," said Carr following his victory. Unlike his familiar setting in Restaurant Anton, the competetive environment demanded adaptability and presence. "I try to bring a little extra generosity, to make the judges feel like guests at my table."

Carr’s journey to the top has been unconventional. After beginning in wine service, he pursued studies in viticulture and enology, a path he credits with strengthening his confidence as a sommelier.

"It allows me to speak with producers in their own language," he explains, "but also to communicate that knowledge for guests. Making wine understandable is a huge part of what we do."

Though the competition was demanding, Carr found joy in the experience – particularly in the blind tasting portion.

"I really feel at home in the discipline of blind tasting," he said. "The spirits flight was tough, but the wine flight was classic and high in quality – a real chance to assess and appreciate the craft."

A Day of High Standards

The championship began with a theory examination and blind tasting, followed by an open sponsor tasting, before culminating in the live final. "The standard this year was exceptionally high. All the finalists displayed remarkable professionalism," said Christian Aarø, President of the Danish Sommelier Association and competition host (also known for his Michelin-starred restaurants AOC, TRIO, and No. 2).
