Noma Projects Opens a New Flavour Shop in Copenhagen
Tucked behind Noma’s Copenhagen restaurant, a quiet greenhouse now welcomes visitors as the Noma Projects Shop — a space where two decades of culinary exploration come alive. Here, bottles of mushroom garum, jars of pumpkin seed praline, and the aroma of freshly roasted coffee capture the inventive spirit of the world’s most influential kitchen.
With the opening of the Noma Projects Shop inside its tranquil garden greenhouse, Noma once again pushes the boundaries of how gastronomy can be experienced and shared. From 18 October, visitors are invited into a space that concentrates over two decades of culinary exploration — a sensory journey through the concepts, ingredients, and innovations that have helped shape the modern vocabulary of Nordic cuisine.
Bringing together the complete range of Noma Projects and Noma Kaffe, the shop offers guests the chance to taste, learn, and take home creations once crafted solely within the restaurant’s test kitchen and fermentation lab. As Managing Director Annika de Las Heras describes it, it’s “the perfect next step.”
“We’ve been thinking about what Noma Projects could evolve into for a long time,” she says. “The vision was always to make our flavors, our innovation, and the research and development from the past 20 years more accessible — to invite people to cook with them, to play with them, and to bring a little of Noma’s creativity into their own kitchens.”
Since its launch in 2021, Noma Projects has served as the bridge between Noma’s experimental kitchen and the wider world — bringing its fermentation-forward creativity to both home cooks and professionals. Bottles of garum, smoked mushroom reductions, and vibrant, layered condiments now share shelf space with Noma Kaffe, the restaurant’s own roasted coffee line.
“The new space allows us to connect with people in real time,” says de Las Heras. “We can share why we love these products, how to use them — and just as importantly, hear guests’ reactions as they taste. It’s a continuous dialogue, much like everything we do at Noma.”
Designed in collaboration with OEO Studio, the shop reflects Noma’s characteristic balance of craftsmanship and curiosity. The Copenhagen-based design firm has translated the restaurant’s philosophy into a calm, tactile space — where natural materials, soft lighting, and lamps made from repurposed coffee shells create an atmosphere of thoughtful simplicity.
During its opening weekend, more than a thousand visitors explored the greenhouse, sampling creations from the test kitchen and meeting the team. “The energy was incredible,” de Las Heras recalls. “It felt alive with discovery.”
Looking ahead, the space will continue to evolve — hosting tastings, events, and spontaneous offerings from the fermentation lab.
“We don’t just want to sell what we make,” de Las Heras adds. “We want to share what we’re exploring — new fermentations, coffee experiments, and little surprises from the test kitchen. Each visit should uncover something new about flavor.”
Open Tuesday to Sunday, 10:00–18:00 (and until 19:00 on Fridays), the Noma Projects Shop stands as a living extension of Noma’s ethos — where science meets storytelling, and every taste carries the spirit of exploration.
