Skål! Falstaff Nordics launches in Denmark
The latest addition to the Falstaff family made its debut at the Copenhagen Distillery on November 27, showcasing the superlative standards and world-beating innovation of the Nordics' culinary scene to thunderous applause.
The latest addition to the Falstaff family certainly made a big impression: Amid 350 exclusive VIPs, the very first issue of Falstaff Nordics was greeted amid enthusiastic applause at the Copenhagen Distillery on November 27. The festivities started with an aperitif with Fiskerijkajen Oysters, an Ant Martini by Rasmus Munk, a cheese station by Arla Unika and a caviar station by 1920 Engros, alongside Champagne Skagen, Campari and non alcoholic options by NOLO Collective. Falstaff publisher Wolfgang Rosam was joined by Tove Oskarsson Henckel, Editor-in-chief of the new magazine, to proudly present the latest food, wine, travel and lifestyle magazine for Denmark, Sweden, Norway, Finland, Estonia, Latvia, and Lithuania – a gateway to the wide world of gastronomy that also celebrates local excellence.
For Henckel, this was the culmination of an ever-increasing presence in Northern Europe that started with an annual Restaurant Guide that made its debut in 2024: “For the past two years, Falstaff has published its guide to Denmark’s best restaurants. Now we are following up with the Nordic magazine, and in the coming years, you will see us partnering on more events and building a strong community with our readers.”

It was then time to honor the best cocktail bars and wine bars in Denmark with Falstaff Nordics' very first awards ceremony! The first award went to Victory in the 25Hours Hotel Copenhagen for the Best Hotel Bar, followed by Ruby, which was honored as the Best American Bar; the Best Newcomer whent to Helen Rosenfeldt of Bar Nu, while Harry Bell of Bird was crowned Bartender of the Year.
In addition to the winners of Falstaff Nordics' inaugural awards, Lars Seier Cristensen received special recognition as Restaurant Personality of the Year: A tireless force within the Danish culinary scene, his passion and enthusiasm has helped define numerous storied establishments like Geranium, Alchemist, Epicurus, and Café Dan Turèll.

Following the awards ceremony, it was time for the official launch and cover reveal, followed by a flying lunch courtesy of Restaurant Selma, Nicolai Norregaard, Matthias Diether, and as a surprise dessert, Brian Mark Hansen & Rebecca Siri Corbo's Bocuse d'Or-winning dessert from 2023.
Several premium Austrian wines accompanied the proceedings, including bottles from Tement, Salomon, Malat, Kolfok, Esterhazy, Markowitsch, and Schwarz. Gram Professional provided freezers to keep things cool, Jazz singer Alice Carreri accompanied the proceedings, which ended on a high note with a giveaway of Falstaff's Viennese Cuisine cookbook and this year's Ultimate Wine Guide.
The successful launch of Falstaff Nordics only underlined the amazing variety and supreme quality that Scandinavia and the Baltics bring to global cuisine; we can't wait to see what's in store!
