Classic Varškėčiai (Lithuanian Curd Fritters)
In Lithuania, varškėčiai — soft curd fritters with golden edges and a tender centre — are less a dish than a memory in edible form. Found on breakfast tables, in family kitchens, and now in modern cafés, they remain one of the country’s most quietly enduring comfort foods.

Place the cottage cheese in a bowl and mash it with a fork until smooth.
Add the eggs, sugar, flour, and a pinch of salt. Mix until a soft, slightly sticky dough forms.
Lightly flour your hands and a working surface. Shape the dough into small, round patties, gently coating them in flour.
Heat butter or oil in a pan over medium heat. Fry the fritters slowly, turning occasionally, until golden on both sides and cooked through.
Serve warm with sour cream, jam, fresh berries, or simply a dusting of sugar.
