When it comes to finesse-rich and expressive Austrian wines with great ageing certain ageing potential, there is one name you cannot ignore: Heribert Bayer. The family and boutique winery of the same name is based in Neckenmarkt in central Burgenland and named after its founder, Heribert Bayer. Initially alone, then as a father and son team, Patrick Bayer has been following in his father's footsteps for more than 15 years and is now the second generation to run the business together with his partner Katja. As a négociant, he creates wines from those vineyards that he considers perfect for the respective grape variety. For example, the range also includes a German Riesling Kabinett from the Moselle called "Große Gefühle".
Heribert Bayer's pioneering work for Austrian red wine and the history of the winery are just as unconventional and unique as the philosophy and approach. High quality standards, a respectful approach to wine as a cultural asset, precision, passion and dedication as well as the patience to give the wines sufficient time to develop and harmonise are the top priorities at the family winery. The result is dense, brilliantly fruity, finesse-rich, harmonious and expressive wines that are characterised by their enormous certain ageing potential. Whether the wines are matured in small French oak barrels or in the bottle, they are given the necessary time to mature in all respects so that they can present themselves in perfect harmony and develop their perfect refinement and aroma spectrum. A certain number of wines are even deliberately held back for this purpose. To this day, the house has played a pioneering role with this philosophy and also boasts an impressive depth of vintage for Austria in its available wines. The estate's best-known wines are the cuvées "In Signo Leonis" and "Herzblut" as well as the Blaufränkisch "In Signo Sagittarii" - three wines that have been among the best red wines in the country for over 20 years.
In the summer of 2023, the winemaking couple then caused a sensation with Austria's first dealcoholised premium wines under the new "Zeronimo" brand. The focus is on high-quality vegan and low-sugar alcohol-free wines. With its dry, complex and completely unique taste, "Zeronimo" impresses connoisseurs who do not want to drink alcohol for a variety of reasons. The first vintages of its two creations, "Zeronimo Leonis Blend" and "Zeronimo Clear Select", sold out in no time at all. In addition to the taste, the winery surprised everyone with its unique approach, as the basis for the first non-alcoholic creation "Zeronimo Leonis Blend" is none other than the cuvée "In Signo Leonis". And in the summer of 2024, the estate's dealcoholised wines were joined by two further creations.
