Tasting Notes
Day One: Light golden yellow. Rested nose with fine, ripe yellow fruit, apricot, Reine Claude plum, some candy sugar, yellow curry, pear, dried lemon zest, incense. Full-bodied on the palate with a broad structure and soft texture, the fine acidity fits in, flows and provides length, good substance and well-packaged power, almost Buddha-like in its charisma. Does not yet appear aged, on point, finishes with iodine and citrus notes. Day two: The savouriness on the nose is a little more exposed, dried chamomile, incense, ripe stone fruit, but also iodine. More balanced and relaxed on the palate, but the tension also seems to have eased somewhat. The acidity shows less presence and freshness? Beautiful mineral savouriness on the finish, including quince. The savouriness is doing well. Day three: A little more carried on the nose, fine savouriness, dried chamomile, nutty. On the palate it is voluminous and retains its tension, shows depth and minerality, length, has gained in sovereignty.
