Raclette Omelette

Jennifer and Arnaud Favre, working with French-born chef Pierre Crepaud, reveal how to make a flavourful omelette with melty raclette cheese. The recipe is from their new cookbook "Haute Raclette".

Ingredients
4 eggs
1 onion, chopped
1 large tomato, diced
50 ml double cream
1 tablespoon(s) olive oil
1 clove of garlic, finely chopped
pinch(es) salt
pinch(es) pepper
2 slices raclette cheese
  • Heat the olive oil in a pan and gently cook the onion and garlic. Add the tomato and simmer for 5 minutes.
  • In a small bowl, beat the eggs and cream and season with salt and pepper.
  • Add the tomato pieces, onion and garlic to the egg mixture and mix well.
  • If using a raclette grill: pour the omelette mixture into a small pan and melt the raclette cheese in another small pan. Once the omelette is cooked to your liking, pour the melted raclette cheese over the top. 
  • If using a frying pan: heat a drizzle of olive oil in the pan, pour in the omelette mixture and cook to your liking.
  • In a separate pan, heat the raclette cheese until melting. Pour the melted cheese over the omelette and serve.
