Spätburgunder ist die wichtigste Rebsorte zur Herstellung von Schaumwein auf Spitzenniveau. 30% der Wilhelmshof-Weinberge sind mit Spätburgunder bestockt. Die auf Muschelkalk gepflanzten Reben beanspruchen gute, warme Lagen, um als Sekt die Vielschichtigkeit und Tiefe entwickeln zu können.
