On May 22, FZN in Dubai was awarded three Michelin stars, making Björn Frantzén the only chef in the world currently operating three restaurants with full marks from the legendary gourmet guide.
Swedish chef Björn Frantzén continues to go from strength to strength: His most recent triumph came at the 2025 Michelin Guide ceremony in Dubai, where his recently opened restaurant, FZN, was awarded three Michelin stars. This makes it the first restaurant in the UAE ever to receive Michelin's highest honor, placing Dubai firmly on the map of elite global dining destinations.
Located indifr the iconic Atlantis The Palm, FZN is the resort’s most ambitious culinary venture to date, combining Nordic precision with international flair and designed to reflect both Frantzén’s distinctive style and Dubai’s grand hospitality ambitions.
Nordic flavors
FZN joins Frantzén’s eponymous Stockholm flagship (three stars since 2018), and Zén in Singapore (three stars since 2021), making him the only chef in the world to hold three Michelin three-star restaurants simultaneously. His culinary group also includes establishments in Bangkok, Marbella and Dubai, reinforcing his reputation as a leading figure in global fine dining.
The kitchen at FZN is led by Danish chef Torsten Vildgaard, a respected name with experience at Noma, handpicked to deliver Frantzén’s vision in Dubai. Currently in its opening phase, FZN mirrors the menu from Stockholm, but plans are in place to introduce regional influences as the restaurant evolves.
