"La Sonett am See": New ice cream factory and chocolaterie on Lake Traunsee
At Lake Traunsee, things are getting sweeter: A new place called "La Sonett am See" has opened in Gmunden, combining an ice cream factory and a chocolate atelier right by the water.
A new place has opened in Gmunden on Lake Traunsee that no sweet tooth can ignore. The new "La Sonett am See" brings together an ice cream factory and a chocolaterie.
Production takes place on site and is openly visible. The focus is on homemade ice cream, pralines and chocolate bars from our own production. "Transparency and craftsmanship are key components of our philosophy", says operator Sarah Schubert. Next to her is her partner Michael Klein. Together they run the new "La Sonett am See" as well as the existing "La Sonett am Graben". Klein originally comes from the patisserie and has made his way through various stations in Europe. He learned the confectionery trade in Münster, obtained his master's degree in Berlin in 2013 and then gained experience as a pastry chef throughout Europe. His last stop took him to the "Hotel Sacher" in Vienna, where he also met Schubert.
Black sesame and chocolate
When it comes to ice cream, you'll find classic varieties such as vanilla, chocolate and hazelnut, as well as more unusual combinations. In addition to regional ingredients, other influences are also added, such as black sesame or special nut varieties. Chocolate is also processed in-house. The most important factors here are where the cocoa comes from and how the supply chains are structured. This results in chocolates and bars that are structured differently, but all have the same approach: as precise as possible and without unnecessary detours.
Shape follows chocolate
The design of the interior is also part of the overall concept. The architectural concept comes from the Linz office "ARKForm" under Klaus Landerl. The design picks up on elements of chocolate, for example in the form of textured surfaces and references to the shape of classic chocolate bars. The ribs on the doors, for example, are based on the structure of the company's own chocolate bars.
