What to do with leftover rice
Got some cooked rice from the day before? These five recipes will help you make creative – and delicious – use of it.
Rice is a bit like pasta – it's hard to cook the perfect amount for each meal. More often than not, you end up with more than you need. But throwing it away is not a solution – as many great dishes can be made with leftover rice. If you get creative, you can make completely new dishes from the leftovers – savory or sweet. Here are some of Falstaff's favorites.
Crispy Rice Salad
Crispy Rice Salad is a very simple way to use leftover rice. Mix cold rice with a little oil on a baking tray, then bake at around 200 degrees until crispy and golden brown. The crispy rice is then mixed with fresh vegetables such as cucumber, peppers and spring onions to make a salad. The dressing is made with lime juice, soy sauce, sesame oil and fresh herbs such as coriander or parsley.
Fried rice with egg
Tried and tested for ages in Asia, fried rice with egg is a classic way to reuse leftovers. First fry finely chopped vegetables like carrots or peas in a pan with a little oil. Then add the cold rice and stir well. Finally, add one or two eggs and leave to set while stirring constantly. Season the dish with soy sauce, salt, and pepper and serve immediately.
Rice hash browns
Rice hash browns are a practical and filling way to use up leftover rice. To make them, mix cooked rice with an egg and fresh herbs. Add some breadcrumbs to make the mixture malleable. Then form small patties out of the mixture and fry them in a pan on both sides until golden brown. They taste even better with yogurt dip!
Arancini
Chilled sticky rice can be made into small rice balls that are crispy on the outside and soft on the inside. Mix the rice with a little grated cheese, salt and pepper. Shape small portions of the rice into balls and optionally place a piece of mozzarella. Coat the rice balls in breadcrumbs and deep-fry in hot oil until golden brown or fry in a pan.
Rice pudding
To make rice pudding, simply place the rice in a pan and add milk. It is important to use enough milk so that the rice can absorb the liquid when heated for a creamy consistency. Slowly heat the rice over medium heat, stirring occasionally until the mix is soft and creamy. Depending on your preferencce, sugar, vanilla or cinnamon can be added to give the rice pudding more flavor. This turns leftover rice into delicious rice pudding in no time at all, which can be enjoyed hot or cold.
