Celery-apple base

Ingredients
1/2 Celery, cut into pieces
500 ml Green apple juice
  • Blitz all ingredients with a hand blender or in a blender, then strain through a fine sieve. Store in a cool spot.

Lemongrass broth

Ingredients
150 ml Water
50 g Sugar
45 ml Lime juice
1 stalk(s) Lemon grass
  • Combine water, sugar, and lime juice in a pan. Lightly bruise lemongrass with the back of a knife to unlock its flavors, add to the pan, and bring to a boil. Off heat, cover and steep 20 minutes, then strain through a fine sieve and chill.

Base mixture

Ingredients
500 ml Celery-apple base
240 ml Lemongrass broth
15 ml Lime juice
65 g Ben's Ginger Ginger Concentrate
  • Blend all ingredients together until smooth.

Wasabi and horseradish foam

Ingredients
150 ml Green apple juice
15 ml Honey
15 ml Lime juice
25 g Creamed horseradish
8 g Wasabi paste
15 g Mascarpone
pinch Salt
  • Puree all the ingredients with a hand blender or in a blender and chill until ready to use.
  • Pour 150 ml of the base mixture into the chilled glass. Whisk the wasabi and horseradish foam with a hand blender until frothy and add 2 tablespoons to the drink.
