Coffee Cake Cookies

The Palatable Life

For the dough

Ingredients (12 servings)
120 g butter (room temperature)
2 tablespoon(s) rapeseed oil
200 g brown sugar
1 egg
1 teaspoon(s) vanilla extract
2 teaspoon(s) cinnamon
1/2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
280 g flour

For the crumble

Ingredients (12 servings)
60 g butter (room temperature)
55 g brown sugar
65 g flour
1/2 teaspoon(s) cinnamon
1 pinch(es) salt

For the icing

Ingredients (12 servings)
65 g icing sugar
1 tablespoon(s) milk
1 drop(s) vanilla extract
  • Preheat the oven to 200°C or 180°C for a fan oven.
  • For the cinnamon dough, beat the butter, oil and sugar until fluffy, add the egg and vanilla extract. Then add the remaining ingredients for the cinnamon dough and mix until you have a smooth dough.
  • For the crumble, put all the ingredients in a separate bowl and rub with your hands to make until combined and crumbly.
  • Now form 12-14 balls from the cinnamon dough and place them on a baking tray lined with baking paper. Leave enough space between the individual cookies, as they will still spread a little in the oven.
  • Using a spoon, make a well in each ball of dough and add the sprinkles.
  • Bake the biscuits in the preheated oven for about 10-12 minutes. Then leave to cool completely.
  • Finally, for the glaze, mix the icing sugar with the milk and vanilla extract and whisk together. Drizzle the glaze over the cookies - done!

Wenn die Brösel oder der Teig klebrig sind, nach Bedarf kleine Mengen Mehl hinzugeben.
