Paprika chicken with sour cream dumplings

For the chicken

Ingredients (4 servings)
1 Chicken, approx. 1.7 kg
650 g Onions
60 g Lard or butter
60 g Paprika powder, sweet
A pinch of hot paprika (or to taste)
650 ml Chicken soup
80 ml Sour cream
Zest of one organic lemon
Salt

For the dumplings

Ingredients (4 servings)
350 g Flour
5 Eggs
170 ml Sour cream
Nutmeg
2 tablespoon(s) Butter
Salt
  • Carve the chicken: cut off the legs and divide into upper and lower thigh, cut the breast from the carcass and halve, detach the wings and separate at the joint. Salt well. Dice or slice the onions.
  • Melt the lard or butter in a heavy-bottomed pan. Add the onions, season well with salt and fry slowly until soft and golden brown. Add the paprika and stir briefly, then deglaze with the soup. Insert the legs and wings. Save the breasts for later.
  • Cover and simmer over a low heat for about 40 minutes. Then place the breasts in the hot sauce and cook gently for a further ten minutes with the lid closed until they are just cooked through.
  • Remove from the heat and carefully lift out the pieces of meat. Stir in the sour cream and finely puree the sauce with a hand blender.
  • Return to the pan and season with salt and lemon zest. Place the chicken pieces back in the pan and leave to warm briefly if necessary.
  • To make the dumplings, beat the flour with the eggs, cream, salt and grated nutmeg to form a smooth batter. Press the mixture through a spaetzle slicer into boiling salted water. Stir and cook for 1½ minutes. Strain the dumplings and drain well.
  • Heat the butter until foaming and toss the dumplings in it.
  • Serve the chicken pieces with the sour cream dumplings.
