You have to build up regulars like that first. Within seven days, the Görgs had raised the additional 150,000 euros for the ten-week total refurbishment, which they had hoped for through crowdfunding. Styrian Josef Göbel, whose Bespoke Furnishing portfolio includes projects such as the Vienna hotel "Die Josefine", "Salon Sacher" and the hip sneaker store "Snipes" in Miami, is responsible for the interior. Star parquet flooring, great lighting and warm green tones form the new setting for the brothers Martin and Stefan Görg, who are the third generation to develop what began as a wine tavern in 1968. The dual management of the kitchen is unique. Martin, who has experience at "Steirereck", and Stefan, who worked at "Obauer", "Landhaus Bacher" and "Triad", alternate between service and kitchen every four to six weeks, while senior chefs Karl and Gerti Görg form the support team. Here you can either order à la carte a delicately textured roe deer brawn on a leaf salad. With the fine veal "rosé", there are better ideas than the crumbly base of golden millet under pointed cabbage and caraway. The menu starts with plenty of pizzazz with Chinese cabbage in paprika jelly with goat's cheese. This is followed by an aroma bomb with stout soup, cabbage and caraway, a broth bursting with power - there is no better way to cook this former "poor man's breakfast". Char comes with beetroot and - on the sweet and sour side - pear puree and buttermilk. Classic venison with colorful carrots and potato gratin. Not on the menu, but still a must: Kaiserschmarren parfait with roasted apricots. The wine cabinet, stocked with a well-chosen mid-range selection, cannot be overlooked. Great view: sunsets towards the Hohe Wand.
