Tasting Notes
Day one: Concentrated aroma of fruit and slate savouriness, ripe peach, pear, fresh orange, blossom honey, lemon zest. Juicy on the palate with concentrated fruit, mineral trait, fine, ripe acidity, subtle sweetness on the attack, pleasantly tart and salty on the finish, dense and long. Day two: Concentrated aroma of fruit and slate savouriness, but finer than on day one and denser, honey notes somewhat clearer, wax notes. The sweetness recedes on the palate and mineral and tart notes emerge more clearly, finish savouriness intensified Day three: Wax notes clearly paired with savouriness, dried herbs, wormwood, incense, candied fruit, tangerine, lemon, ginger. Dense and compact on the palate, ripe, distinctive fruit interwoven with savouriness, intensifying on the finish and carrying into the length, not tired, still with tension.
