Tasting Notes
65 months of yeast ageing, disgorged December 2016. Delicate Pinot-berry aroma, very fresh, no tertiary notes. A trace of yeast, nougat de Montélimar, apple skin. A bit more ripe on the palate than on the nose, behind a fine but also powerful mousse. Ripe, sustaining and length-giving acidity meets substance and a tight body. Yet the wine is elegant and nuanced, full of delicate fruit. Pithy, long, and finally mineral-firm.
