Tasting Notes
The nose has citrus and floral undertones, but is slightly reductive and very closed. With air contact it becomes increasingly chalky. The palate is concentrated and juicy, with delicate phenolics and a slowly rolling minerality. The firm, almost biting acidity, is also somehow plump and wrapped in richness. A dense wine, which manages to combine almost slender, sinewy concentration with being fat and muscular, and very well-defined minerality with being completely turned in itself. pH 3,3-3,4.- Ageing: 10 percent in steam-bound barrels, 10 percent in fire-bound barrels, 20 percent in Inox stainless-steel tanks, 60 percent in amphora (with controlled oxygen permeability).
