The Ruinart team tracked down the bottles in Paul Bocuse's cellar in Lyon. Looks and smells like a sherry. Notes of almond, hazelnut and iodine-smoky nuances, but also fruity notes of cooked apricot and candied orange. No perlage is noticeable on the palate: quite high, fresh acidity, concise saltiness. Finishes with smoky nuances.
