Tasting from 31.12.2019: Ulrich Sautter

Ripe, but still fresh Cabernet fruit on the nose - some blackcurrant, some tobacco and hints of mint. and dried bean. It becomes increasingly herbal and spiced with aeration. Smooth and silky on the palate, then a dense palate structure builds with rather discreet acidity and with some fullness, and a tannin that thickens up grainy in the course of the finish. This is an imposing, quiet and mineral-salty type of Cabernet that is far from fully mature yet.
