First signs of maturity show in the colour. Still reductive on the nose and still closed on the palate, which is dense and pithy, full-bodied and very mineral. There's plenty of juiciness in the background and an extract that'll last for further years of development. The juicy structure is more suited to oysters than to St. Jacques or lobster.
