Tasting Notes

Tasting from 23.03.2022: Ulrich Sautter

Apple peel and some balsamic-scented spontaneous fermentation notes on the nose. It's flinty and pithy in the mouth, with the firm acid backbone accompanied by intense mineral notes. This is a wine with considerable depth and tension, despite the lean to medium-weight structure typical of Aligoté. Very pithy, mineral and slightly astringent.
