A complex bouquet - ground rock, salted lemons, ripe pears and pineapple, with candied ginger, almonds and roasted notes. Herbal freshness from thyme and sage mixes with vanilla and yeasty notes like bread on the nose. Elegant on the palate with a full-bodied, creamy texture allied to vital acid structure and mineral freshness. The herbal savouriness continues on the palate, along with indications of good use of wood. Good ageing potential.
