Tasting Notes
Day 1: Light gold - yellow, with delicate greenish reflections. Ripe tropical fruit on the nose, such as candied pineapple and mango, complemented by hazelnut shell and fresh green gas. Delicate flint note. On the palate, it appears vegetal and tart in the first instance. Ripe pome and citrus fruit builds up on the finish. Animating, unobtrusive acidity. Balanced, elegant and juicy and firm. Fine mineral length. Day 2: The tropical aroma fades on the nose and the floral, vegetal side becomes more prominent. It becomes spicier, more chalky. On the palate, the change goes in a similar direction. The vegetal tartness comes to the fore. Minerality builds up. The core fruit appears somewhat riper and softer, which makes the wine generally appear somewhat rounder and more accessible. Day 3: Tropical fruit recedes completely into the background in favor of ripe yellow quince and pear. The stony, smoky, herbal notes prevail. Fresh herbs and white pepper. A hint of chalk. Generally somewhat more subtle on the nose. The palate continues to be dominated by tart, vegetal notes. There are also accents of orange zest, but here too more restrained and with less substance. A beautiful mineral melt and a fruity finish remain.
