Tasting Notes
Day One: Ripe yellow apple with pear, mirabelle plum, nutty, also fine yeast and some quince and subtle malty savouriness in the appealing fragrance. Also starts on the palate with beautiful savouriness, smooth background, juicy, also fine tartness, pear and quince as fruit notion, the vivid acidity provides freshness, a trace of chalky minerality spreads in the background, elegant, animating. Day two: The spiciness in the nose has increased, gunpowder, fine smoke, pear, quince. More rested on the palate, the acidity is more integrated, the chalky minerality is given a good stage. Day three: Still very savoury on the nose and also peppery, more subtle in the fruit, pear, ripe lemon, also quince, a hint of orange peel. Smooth mouthfeel, finely chiseled acid vein, the spiciness and minerality persist.
More about the tastingOn the nose, aromas of yeast, ripe apple, pears, quince, fresh corn, ground hazelnut and crushed rock. On the palate juicy and fresh with traction, lively acidity, a textured core, mineral savouriness, a salty note, tart and juicy fruit with nice length. An animating style.
