Herkunft Die Trauben für diesen Wein stammen aus einem etwa 25 Jahre alten Weinberg mit deutscher Genetik, der stärker nach Westen geneigt ist. Dadurch und durch seine extremere Hanglage (15-35%) reifen die Trauben deutlich schneller und früher wie in den anderen Spätburgunder-Weinbergen. Deshalb haben wir diesen Weinberg auf den Zapfenschnitt umgestellt. Daraus resultieren geringere Erträge und eine spätere Reife. Das bringt uns qualitativ, aber auch arbeitswirtschaftlich große Vorteile. Vinifikation Frühe, selektive Lese per Hand nach geschmacklichem Empfinden von Beerensüße und Säure. Im Weingut werden die Trauben entrappt. Die Gärung findet ausschließlich mit kellereigenen Hefen statt. Nach etwa 1 bis 2 Wochen warmer Gärung mit wenig bis kein Unterstoßen (pigeage) wird die Rotweinmaische sanft ausgepresst und direkt in die französischen Fässer gelegt. Intense colour. Savoury aromas, with notes of gingerbread, blueberry and crushed grapes. The palate is intense, fresh and full of tension, with grippy, well-judged tannins and concentrated berry fruit on the finish.
