Subtle use of wood, discreet and suitably buttery, yeast flakes, corn grits, still youthful and just beginning to open up. Also, ground hazelnut. The palate is compact; supple and substantial characteristics resonate together; a civilised acidity gives structure and length, and a pinch of tactile granite minerality supports the structure.
