Tasting Notes
Day 1: Deep, dark red with violet reflections on the rim. Wild berries, sweet cherries and chokeberries dominate the nose. Assam tea, coffee and fir resin. Complex and multi-layered. Very dense texture and substance in the mouth. Tannins are ripe but coarse-grained. Lining, with an underlining acidity as a backbone. Opulent coffee and forest aromas on the finish. Day 2: Not much change. Slightly less tea and coffee, more sweet red fruit. In the mouth, the acidity recedes. This makes it appear somewhat rounder. Fruit in the mouth gives way more to herbs and woody aromas. Day 3: Very ethereal and delicately spicy on the nose. No longer quite as intense. But finer and more elegant. On the palate, the acidity is again stronger than yesterday, but the fruit is more subtle. It is clearly more tart, coarser-grained, firmer and more angular, more concentrated. More concentrated minerality. It comes across very much like a young Bordeaux.
