Ingredients
200-220 g Spaghetti
The juice and zest of 1 1/2 lemons (more or less depending on preference)
50 g Parmesan
some Olive oil (cold-pressed)
some Salt
pinch Pepper
handful Basil (for garnishing)
  • Boil the spaghetti in salted water until "al dente".
  • While you wait, rinse the lemon briefly under warm water, then dry and finely grate the zest. Important: only grate and use the yellow part of the peel, otherwise the sauce will be bitter.
  • Then squeeze the lemon and put the juice in a bowl with the Parmesan and spices. Mix everything together.
  • Double the amount of olive oil so that the ratio of lemon juice to oil is about 1:2.
  • Add the freshly cooked pasta to the lemon and oil mixture while still warm and mix thoroughly.
  • Finally, sprinkle with freshly grated Parmesan and basil before serving.
