Homemade almond granita

Almond Granita

Ice meets rich almond purée – mixed together and scraped up into icy flakes, it makes an almond granita!

Ingredients (4 servings)
110 g organic almond purée, (available online)
2-3 tablespoon(s) sugar
500 ml water
  • Mix everything together and season to taste (it tastes less sweet frozen!).
  • Pour into a suitable metal or enamel mould and freeze.
  • After 1 hour, remove from the freezer and roughly mix with a fork. Freeze for a further 2 hours, then scrape through vigorously with the tines of a fork to get icy flakes.
  • Cover with foil and freeze until required. Up to this point, the recipe can be prepared up to 3 days in advance
  • Before serving, scrape again vigorously to obtain even crystals and pour into chilled glasses.
