Christmas Superfood Balls

Cocoa in its finest form? This delicious and healthy version of a Christmas specialty can be refined to suit individual tastes.

For the energy balls:

Ingredients
100 g coconut oil, melted
70 g cocoa butter, melted
100 g cocoa powder
60 g dates, pitted
20 g honey
1 vanilla pod, inside only
1 pinch(es) Maldon sea salt

Tip:

These energy balls can be varied by adding different favours or coatings.
Alcohol (eg fruit brandies, rum, cognac)
Spices (eg cinnamon, chilli, tonka bean)

To coat:

Ingredients
Dusting ingredients (eg matcha powder, cacao powder, coconut blossom sugar)
edible flowers (eg rose petals, marigolds)
various nuts (eg almonds, hazelnuts, walnuts), chopped
superfoods (eg cocoa nibs, goji berries, hemp seeds)
dried fruits (eg raisins, cranberries)
  • In a blender, place melted coconut oil, melted cacao butter, cacao powder, pitted dates, honey, the inside of the vanilla bean and a pinch of Maldon salt.
  • Blend all ingredients at maximum speed until smooth. Chill the mixture for 4 hours.
  • Using a spoon to portion out, form small balls out of the solid mixture by hand. 
  • Coat the still-wet balls with ingredients of your choice such as matcha powder, rose petals etc.
  • Chill the energy balls before serving. They can be stored in the refrigerator for up to several weeks.
