Dry Extract Interview: Salvo Russo of Heliot Steak House, England

Salvo Russo is head of wine at London's Hippodrome Casino, which includes the fine-dining restaurant Heliot Steak House. Salvo moved to London from his native Italy at the age of 20 to pursue a career as a sommelier, working in numerous restaurants and bars. He has Level 4 WSET Diploma, is a WSET wine educator and one day dreams of making his own wine.

The best advice I ever got

Be grateful for what you have.
