Hanover: Jante expands with Jante Studio

Dropping by spontaneously for just one course? Long unthinkable in fine dining. In Hanover, that is now becoming a reality.

For years, the Jante restaurant in Hanover has been one of the most consistent addresses in top German gastronomy. Opened in 2015 by Tony Hohlfeld and Mona Schrader, the restaurant earned its first Michelin star in 2016, followed by a second in 2020. Clear lines, long evenings, lots of planning – this is what the Jante stands for. Now, however, the concept is evolving.

With Jante Studio, an independent format was created in the front area of the restaurant. Separated by a curtain, redesigned with high marble tables and a deliberately informal atmosphere, the room is more reminiscent of a bistro-style wine bar than a classic Michelin-starred restaurant. It opened on April 8 and welcomes guests from 6 PM on Wednesdays to Saturdays, and from 12 PM on Saturdays.

A simple question

The idea emerged during day-to-day service. Time and again, guests asked whether it was possible to stop by for a short visit a course, a glass, without having to book the entire menu. What was initially taken up as a side note is now becoming a concept in its own right: low-threshold access to a cuisine that was previously mainly experienced as part of a long evening.

The studio now offers an à la carte selection. The so-called "Studio Bites" come straight from the kitchen of the two-star team but in a form that is designed to be more flexible.

The menu ranges from simple starters such as bread & butter (€11) or mushroom crackers (€7) to dishes like ravioli with egg yolk (€26). In addition, there are options  such as fish & chips or fried chicken with mimolette (€28 each, with 30 grams of caviar €55). Those who want to delve deeper will find lobster with wild garlic (59 euros), a Rossini sandwich (€55) or caviar variations- such as "Caviar Pervers" with potato for €89. Desserts also remain at this level: Tête de Moine with windfall fruit (€24) or a lava cake with white truffle ice cream (€20), each optionally supplemented with caviar.

No dress code, no reservation

The drinks concept follows the same philosophy. Wines served by the glass include a Charles Heidsieck Brut 2006 (€29 for 0.1 liter), wines from the Espenschied winery in Rheinhessen, a Tannenzäpfle or classic bar drinks such as Espresso Martini and Negroni.

The key difference lies in accessibility: the studio does not require a reservation or formal attire. Simply drop by, take a seat and leave again just as spontaneously.

At the same time, the actual restaurant concept remains unchanged. The rear area continues to function as a classic fine dining experience with a structured menu. In the long term, the studio will also serve as a venue for additional formats from winegrowers' evenings to smaller events or private functions.
