Creamy Potato Soup with Porcini Mushrooms

This recipe combines the delicate texture of potatoes with the intense aroma of porcini mushrooms, creating a rich and flavorful soup.

Ingredients
1 onion
30 g butter
300 g waxy potatoes
2 medium floury potatoes
100 ml heavy cream
1 l vegetable broth
salt
pepper
marjoram
Dried porcini mushrooms, for garnish
2–3 waxy potatoes, for garnish
  1. Sauté the onion in butter until translucent. Add the peeled and roughly diced waxy and floury potatoes, then pour in the vegetable broth.
  2. Season with salt, pepper, and marjoram and cook until the potatoes are soft. Add the heavy cream, bring to a boil again, then blend the soup and pass it through a sieve for a smooth texture.
  3. Meanwhile, peel the potatoes for the garnish, dice them into small cubes, and cook them in salted water until tender. Soak the dried porcini mushrooms in water and squeeze them well afterward.
  4. Serve the soup with the potato cubes and porcini mushrooms as garnish.
