Delicious ham rolls by top chef Alexander Mayer from his "Mayer und Freunde" in Vienna's city centre. He revealed his recipe to Falstaff. "It's all about really good ingredients," he says.

For the mayonnaise

Ingredients (4 servings)
2-3 tablespoon(s) Dijon mustard
2 tablespoon(s) Sour cream
250 ml Good sunflower or rapeseed oil
150 ml Olive oil
4 Egg yolk
A little lemon juice
1 dash Sherry vinegar
1 dash Worcestershire sauce (to taste)
1 pinch Cayenne pepper
Salt
Sugar

For the French salad

Ingredients (4 servings)
60 g Peas
60 g Carrots, cut into small cubes
60 g Celery stalks, cut into small cubes
60 g Cornichons, cut into small cubes
120 g Potatoes, cut into small cubes
4 Large eggs, boiled until soft-boiled and roughly diced
1 splash(es) Sriracha chilli sauce (or dose according to desired spiciness)
2 tablespoon(s) Pickled mustard caviar
4 tablespoon(s) Chives, finely chopped
Some lime juice
Some pickle water
8-12 slices Juicy leg ham (2 slices per person, not too thinly sliced)

Preparation:

  • Mix the egg yolks, mustard and sour cream with the spices until smooth. Then whip with the oil mixture to a creamy mayonnaise.
  • Cook the potatoes, peas, carrots and celery separately in plenty of boiling salted water until al dente.
  • Mix all the ingredients for the salad with 250 ml of the mayonnaise to form a homogeneous mixture and season with a little vinegar, Worcestershire sauce, salt, sugar and cayenne pepper if necessary.
  • Spread the French salad evenly over the bottom third of the ham slices, not quite reaching the edges. Now roll up the ham slices tightly. Serve with crusty baguette or twice-baked rye bread.
