Schweinsbraten with potato dumplings

Schweinsbraten with potato dumplings is a centerpiece of Viennese cuisine and a feast for the senses. Tender, juicy meat with a crispy crust, seasoned with caraway and garlic, paired with fluffy dumplings made from starchy potatoes.

Cooking time: 120 minutes

Ingredients (8 servings)
2 1/2 kg Pork (neck or blade)
4-5 garlic cloves, crushed
2 yellow carrots
2 orange carrots
1 onion
1 kg pork bones (from the loin)
Salt
Pepper
Marjoram
Caraway seeds
  • Season the pork generously with salt, pepper, marjoram, caraway seeds and crushed garlic.
  • Cut the yellow and orange carrots into 1-inch (3-cm) pieces, quarter the onion with the skin still on.
  • Distribute the bones, carrots and onion in a roasting tray and place the seasoned pork atop of the bones. Pour water (or beef stock) into the roasting tray about 1 inch (2 cm) high and then place in a preheated oven at 350 °F (180 °C). Roast for approx. one half-hour per pound of pork (one hour per kilo).
  • When the roast is done, lift it out of the roasting tray, cut open, strain the juices from the tray into a pot and season to taste.

500 g starchy potatoes, peeled
3 egg yolks
1 1/3 cup(s) course flour
4 tablespoon(s) semolina
100 g butter
Salt
Nutmeg

Potato dumplings

  • Boil the potatoes in salted water for approx. 35 minutes, drain the water but leave the potatoes to let off steam for 2 to 3 minutes. Then mash the potatoes and leave to cool. 
  • Mix the egg yolks into the cooled-off mashed potatoes, then add the remaining ingredients and work the dough immediately, shaping the dumplings with your hands.
  • Cook the dumplings in gently boiling water for 25 minutes.
