Imeretien

In the eastern part of West Georgia, in the valleys and gorges of the Rioni, Qwirila and other rivers, is the region of Imeretia. On the fertile alluvial land, in the wind-protected microclimate along the rivers, thrive a variety of grape varieties, of which the white Zizka is particularly typical for the region. Here, a time-honoured vinification method is used, similar to the Kakheti method, except that grape skins are placed in the clay jars in which fermentation takes place, reminiscent of the Italian Governo method. This is followed by a six to eight week maceration.
