It reflects, above all, his culinary philosophy – to present Italian food to guests on a completely different level than they are used to in Slovakia. Andrea Ena deliberately avoids exaggerated combinations of ingredients, because his goal is to sharpen his own vision of perfect and pure taste. His menu faithfully copies the seasonality, so it always contains current crops. His exceptional risottos should be highlighted, as well as modern interpretations of fish and shellfish dishes.
