It doesn't get much more Swiss than this: a well-tended garden terrace in front of the house, wooden panels and furniture inside exude a rustic feel. However, the typical spicy menu and some kitsch are missing to create the right country pub ambience. But that's certainly true, as the "Drei Stuben" is in the middle of Zurich, around a ten-minute walk from the train station. It has been run by the young team from "The Artisan" in Wipkingen since fall 2022. The service is attentive and friendly, but keeps its distance at the right moments. The wine list features organic and natural wines, many of which come from Switzerland. Most of the ingredients used in the kitchen are also sourced locally. Swiss egliknusperli with watercress remoulade are served as a snack to accompany the aperitif - sparkling wine from the Adank family in Fläsch. Nostalgic, but with a twist. This sums up the menu in general: a nice mix of down-to-earth but modern dishes and old classics such as Läberli or cordon bleu. The starters all impressed us: marinated summer tomatoes with goat's cheese and elderflower vinaigrette, fresh strawberries with burrata, basil, olive herb and grilled sourdough toast and a tasty Alpine salmon tartare and roe with a cucumber and verjuice dressing. Everything is summery, well seasoned and makes you want more. Our favourite main course was the Alpstein free-range guinea fowl with cornelian cherry, carrots and nettle and herb dumplings. We eat the dessert of praline ice cream with berries out of a sense of duty, not because it's not good, but because we are already very full. A lovely evening in a pub that has found its way into the 21st century!
