Tableware from KPM, Riedel glassware, fine details wherever you look; star chef Björn Swanson has made no compromises when furnishing his French-inspired bistro. With space for up to 85 guests, there is a lively atmosphere, as befits a bistro. Swanson, who runs the best-known "Faelt" in the capital, presents a powerful cuisine in the bistro together with head chef Norman Faust, which impresses with its rich use of butter and opulent flavours. A menu that leaves nothing to be desired is served at the characteristic trumpet-shaped tables: from a creamy, frothy artichoke soup with piment d'Espelette to a silky, sumptuous duck liver terrine and loup de mer with a wonderfully aromatic oyster fumet. Signature dishes include lobster "Thermidor", a Boston cream donut with caviar and - particularly extravagant - a mock hare, refined with Périgord truffle. Luxury producs isnot shied away from here, but rather showcased. The drinks menu has a clear focus on top wines from German and French wine growing regions and includes fine wines such as Krug Champagne and 1er Cru Chardonnay. Of course, no meatloaf spread with bread for those who couldn't afford a Sunday roast. No, here the meat is a succulent French country terrine, centred around a duck foie gras core and smothered in Rouennaise sauce. Only a generous amount of Périgord truffles can compete with its rich aromas of blood, meat, and cognac. "Feast once, please," is the motto here.
