Adega Velha wird aus Wein mit DOC-Status (Denominação de Origem Controlada) hergestellt, der ursprünglich aus der abgegrenzten Region Vinho Verde stammt, einer Weinregion, die für ihre Mineralität, ihren Säuregehalt und ihre Ausgewogenheit berühmt ist und die Herstellung eines einzigartigen Brandys ermöglicht. Alles beginnt in den Weinbergen der abgegrenzten Region Vinho Verde, wo die roten Trauben sorgfältig nach ihrem Säuregehalt und ihrem niedrigen Zuckergehalt ausgewählt werden, um einen leichten, ausgewogenen Wein zu erhalten. Dieser Wein wird dann einer doppelten Destillation in einem Charentais-Amboss unterzogen, der aus der Region Cognac in Frankreich stammt. Nach der Destillation reift der Weinbrand langsam in Eichenfässern aus dem Limousin, die ihm seine herrliche Bernsteinfarbe und sein reiches Bouquet verleihen. Complex nose with notes of vanilla, clove and fruity nuances reminiscent of small red berries and citrus fruits; oak nuances. Soft and supple on the palate but not tending towards sweetness. Long finish.
